Why I Love This Recipe
So the other night I am searching the cupboards for something to make for a side dish. Side dishes are so boring sometimes and I was completely tired of our old stand-bys. I had pasta (penne this time), an assortment of those steam in a bag frozen veggies, cream cheese, and all the regulars (onion, bell pepper, garlic) in the house....what to make!! So, I start throwing stuff together, as I am apt to do and what came out was WONDERFUL! I ate it for dinner the next night, as a meal in and of itself! I LOVE it when something turns out surprisingly well, with NO effort!
Ingredients You'll Need
5 strips peppered bacon (if you use this, you won't need to spice your sauce at all), diced
1 12oz bag of southwestern corn
1/2 small onion, diced
approx 1T olive oil
1 block of cream cheese
1 cup white wine or chicken stock
Saute onions, olive oil and bacon in a sauce pan. When bacon is cooked to desired tenderness, add corn and heat through. Then add cream cheese. Melt cheese. Add wine and simmer until ready to pour over your cooked pasta.
