Walk a Thousand Miles Oatmeal (“Wild”)
Why I Love This Recipe
After a failed marriage and the death of her mother, Cheryl Strayed lost hope. Years of reckless, destructive behavior lead to an epiphany that sends her on an epic journey to rediscover herself and her purpose in life.
Driven only by sheer determination, Cheryl packs a bag and sets upon a thousand mile hike of the Pacific Crest Trail, alone.
Every day is an adventure filled with physical and emotional challenge -- from hauling a 75 pound backback to waking up to the same “cold mush” oatmeal day after day.
Ingredients You'll Need
1 cup low-fat milk
1 cup water
Pinch of salt
1 cup quick-cooking oats
1 very ripe banana, mashed
1 tablespoon maple syrup
1 tablespoon chopped walnuts
Combine milk, water and salt in a medium saucepan; heat until almost boiling.
Add oats and cook, stirring, until creamy, 1 to 2 minutes.
Remove from the heat and stir in mashed banana and maple syrup.
Divide between 2 bowls, sprinkle with walnuts and serve.
