Ingredients You'll Need
3 15.5 oz. cans of red kidney beans
2 15.5 oz. cans of white beans
2 15.5 oz, cans of dark red kidney beans
2 15.5 oz. cans of black beans
1 28 oz can of spaghetti or tomato sauce
1 14.5 oz. can of diced tomatoes, if desired
2 Tbsp. Vegetable oil
2 onions, finely chopped
1 bell pepper, finely chopped
1 cup of chili powder mix
2 tsp. Oregano
2 tsp. Ground Cumin
1 tsp. Crushed red pepper flakes, or add when served
add other vegetables as desired (chopped broccoli and/or cauliflower, diced carrots, etc)
Drain and rinse beans in a colander.
Saute onions and peppers in oil until soft. Add to pot.
Chop other vegetables into bite-size pieces, sauté in oiled pan or pre-cook in microwave on high for 1 minute 30 seconds.
Add sauce to pot, mix in seasonings.
Add beans and other ingredients into large pan. Bake for 1-2 hours at 350 degrees and cook until heated through, or heat on stove for one hour.
Serve with cooked white rice to increase the number of servings
