Turkey lasagna with Cremini Mushrooms

Why I Love This Recipe

For the past few weeks Rob's been begging me to cook something for a group of foreign exchange students he met while working at Ski Santa Fe. There's about 10 people from all over South America on a worker exchange program for the ski season. When Ski Santa Fe failed to help them with their temporary move, Rob stepped in to find them an apartment in our same complex. And in much disbelief from his boss, furnished their whole apartment with Craigslist give aways. They have become friends of ours, and every so often I bake them small treats. They raved about my Extra Butter Cupcakes, but since they will be leaving in a week, I decided to prepare them a homemade Sunday dinner, Lasagna. A relatively cheap meal that can feed an army.

Now it's not my fanciest of dishes, and as you can see in the picture, my dish was just a bit too small. I could have sacrificed cheese and sauce, but let's be honest, who really wants that?

Ingredients You'll Need

1 lb Lasagna Noodles (Whole Wheat if you can find them), partially cooked for 5-6 minutes

1 1/2 lbs Ground Turkey Breast
1 lb Cremini mushrooms, sliced
1 Yellow onion, roughly chopped
5 Cloves Garlic, finely chopped
3 lbs Cento Chef's Cut Tomatoes with Basil
12 oz Hunt's Tomato Paste
A few pinches of oregano
A few shakes of sea salt
A few grinds of black pepper
A few pinches of sugar
a pinch of Cayenne
1 or 2 tbs of red wine vinegar (BUT I WOULD HAVE RATHER USED ACTUAL RED WINE)

Cheese Filling
15 oz ricotta
3/4 lb mozzarella
1 c. Parmesan Reggiano
1 Large egg
Fresh basil, roughly chopped
Flat leaf parsley, roughly chopped
A few pinches of onion Powder
A few pinches of garlic powder
A few pinches of oregano
A few grinds of black pepper
A pinch of cayenne


* A pinch of cayenne

-Mix ingredients together.

-In buttered dish, layer the sauce, noodles, and cheese. Just make sure you have a deep enough serving dish to accommodate your layers. Finish with a layer of sauce on the top

-Sprinkle 1/4 lb mozzarella and more grated Parmesan.

-Add thin slices of butter on top and cover with foil.

-Bake at 350 for 45 minutes.

-Uncover and bake for 15 more minutes to let the cheese get golden brown.
