Tequila Shrimp

Everyone loves this when I do a mixed grill. Last time I had prosciutto wrapped asparagus, mini roasted potatoes and kale, grilled chicken strips marinated in mango chili and my mango, papaya, avocado salsa. Wow! Couldn't believe how everyone lapped all those up, even the young kids who I didn't think would go for the kale and asparagus. They usually turn their noses up at that stuff.
Ingredients You'll Need
Marinade:
1/2 cup tequila
2 Tbsp extra-virgin olive oil
2 Tbsp fresh lime juice (usually one lime)
1 Tbsp minced garlic
1 Tbsp minced jalapeno pepper (usually small one, seeds removed)
1 tsp cumin
1/2 fresh ground pepper
32 medium to large shrimp (1 1/2 lbs) peeled and deveined
Kosher salt
1 fresh lime, cut into wedges
Bamboo BBQ skewers
Directions
Whisk marinade ingredients together in a small bowl
Place the shrimp in a large, resealable plastic bag and pour in marinade. Press the air out and seal tightly. Place in a bowl in the fridge for 30 - 45 mins
Remove shrimp from bag and thread unto skewers and season with salt and pepper
Grill over direct high until shrimp are just opaque in the centre, 2 - 4 mins turning once halfway
Remove from grill and serve warm with lime wedges
