Sweet Potato Coconut Soup

Why I Love This Recipe

A light, sweet, vegetarian soup for a cold day (or any day).


Ingredients You'll Need

3 large sweet potatoes
2 tbsp vegetable oil
2 onions, chopped
2 celery stalks, chopped (optional)
2 cloves garlic, minced
2 tbsp grated gingerroot
900mL chicken/veg stock
2 soft apples, chopped
1 tsp mild curry paste/powder
400mL coconut milk


Directions

Cook sweet potatoes; prick potatoes with skins on and cook in microwave 10 mins (or oven for 60-90 mins)


While sweet potatoes are cooking, heat oil in large pot over low heat


Cook onions (and celery if including) for 6-8 mins


Stir in garlic and ginger; cook 1-2 mins


Add chicken/veg stock, fruit, and curry paste/powder


Bring to boil; reduce heat and simmer until fruit and vegetables are tender


Peel, cube, and drop sweet potatoes into soup when cooked; simmer 5 mins


Puree with an immersion blender or in batches in food processor


Stir in coconut milk until evenly blended; adjust viscosity with additional stock or water if desired


Season to taste


Pairs Well With

Buns, cheese, baked chickpeas
