Super Easy Avocado Burger Topping

Why I Love This Recipe
I bought an enormous, heavy book off the bargain rack at Barnes and Noble called 1000 Best Recipes. Since then I haven't been able to find the book online to link to it when I blog about it. I have no idea why this is, but at the time of my writing this, I don't have the book in front of me so I'll look up the publisher later.
ANYWAY, I adapt a lot of the recipes I find in there to suit my tastes. This one has avocado in it and since I'm Puerto Rican, I'm expected, by law, to love avocado. It's in my heritage contract.
Ingredients You'll Need
1 avocado, peeled, pitted and cut into cubes
1 tomato cubed (or a handful of cherry tomatos, halved)
4 oz canned corn kernels
2 tbl lime juice
Directions
Basically you toss half the can of corn kernels and the rest of the ingredients in a small bowl. Toss with 2 tbs of lime juice to keep the avocado from browning.
You can use this to replace your lettuce or in addition to it. You can get creative, adding cooked carrots, onions or whatever your heart desires!
