Sunny Turkey and Pasta Salad

Why I Love This Recipe
This recipe holds up well and can be served several days after preparing.
Ingredients You'll Need
1/2 cup mayonnaise
1/4 cup chopped red onion
3 Tbsp apricot preserves
3 Tbsp lime juice
1/4 tsp pepper
8 oz sea-shells pasta- cooked, rinsed with cold water & drained
1 can (11 oz) mandarin orange section, drained
2 cups seedless grapes- halved
1/3 lb. turkey or smoked turkey breast- diced
1/2 cup coarsely chopped walnuts (optional)
In a large bowl, combine mayonnaise, red onion, preserves, lime juice, salt and pepper. Add sea-shells, mandarin oranges, grapes and turkey. Toss gently to coat.
Serve immediately or chill. Sprinkle with walnuts just before serving.
NOTE: I used half green grapes an half red grapes for the 2 cups of grapes
