Sun Dried Tomato cream cheese mousse

Why I Love This Recipe
believe it or not, this actually tastes like salmon mousse! :) It is great for pot lucks and get togethers, and looks like it was way harder to make than it actually is!
Ingredients You'll Need
1/2 c sun dried tomatoes
2T pesto (I use the kind in the tube)
2 8 oz blocks of cream cheese - softened
6 slices provolone cheese
Directions
mix 1 block cream cheese with sun dried tomatoes - I use my old hand stick blender for this (hint, hint :)
Layer into loaf pan as follows -
provolone cheese (3 slices)
sun dried tomato cream cheese mix
provolone cheese (3 slices)
remaining block of cream cheese
cover, and let set in fridge overnight
when ready to serve, turn over and unmold
Garnish with pesto over the top of the cheese
Serve with your choice of crackers
