Slow Cooker Mississippi Roast

Found this recipe online and i have been using it ever since. It is super flavorful and each of my roasts has fallen apart with this recipe - so very tender!

Ingredients You'll Need
1-3lb boneless beef chuck roast - excess fat trimmed
10 Jarred pepperoncini
1/2 cup brine from the pepperoncini
1 one ounce envelope dry onion soup mix
2 tsp garlic powder
2 tsp dried thyme
2 tbsp butter, cut up
Mashed Potatoes (optional)
2 Tbsp Mayonnaise (optional)
Season roast all over with salt and pepper. Place in a large slow cooker, along with pepperoncini and brine.
In a small bowl, stir together the soup mix, garlic powder, thyme and 1/2 cup of water. Pour over roast.
Dot the top of the roast with the butter.
Cover and cook on low for 8-9 hours, until tender
Cook the mashed potatoes (optional)
Transfer beef to a large bowl and shred, discarding excess fat.
Whisk the mayo into the cooking liquid (optional)
Serve beef over mashed potatoes with pepperoncini and some cooking liquid.
