Simmered Coconut Curried Tofu with Pineapple Lime Rice

Ingredients You'll Need
1 block firm or extra firm tofu, cubed
1 tbsp. olive oil
2 tsp. sesame oil
3 tbsp. peanut butter
2 tbsp. soy sauce
2 tbsp. water
1 tsp. curry powder
1/4 cup coconut flakes
2 tbsp. fresh cilantro, minced
FOR PINEAPPLE LIME RICE
2 tbsp. vegan margarine
2 cups rice, cooked
1 1/2 tbsp. lime juice
1/3 cup chopped fresh cilantro
1 16 oz. can pineapple tidbits, drained (or try fresh cubed mango)
Dash of sea salt
Directions
Saute tofu in olive oil for just a few minutes, until lightly browned.
Reduce heat to medium low and add sesame oil, peanut butter, soy sauce, water, curry powder, stirring well to combine. Heat, gently stirring, for 4-5 minutes.
Add coconut flakes and cilantro and heat just until well combined, about 1 more minute.
Prepare pineapple lime rice. Stir vegan margarine into hot rice until melted and combined.
Add remaining ingredients, tossing gently to combine. Season to taste.
