Seasoned Pork Chops

Why I Love This Recipe
I just threw this together to make a tasty pork chop.
Ingredients You'll Need
6 boneless loin pork chops
Cajun Seasoning (I used homemade "Essence")
1/2 cup Bisquick mix or flour
1/2 cup Italian bread crumbs
2 eggs, beaten with a dash of water
Directions
Sprinkle Cajun seasoning over both sides of the pork chops. Let sit for 1/2 hr.
Place Bisquick, eggs, and bread crumbs in separate plates (I use pie pans). Dip each chop first in the Bisquick, then egg, and finally bread crumbs.
Heat enough shortening in an electric skillet to cover the bottom. Cook chops at 350 degrees F until golden brown, turn and cook other side for a few minutes. Cover the skillet, lower the heat to 300-325 degrees F and cook slowly until chops are done. Total cook time was approximately 15 minutes.
Remove chops from pan onto serving plate. Cover and let sit a few minutes. Delicious with mashed potatoes on the side.
