Scalloped Potatoes - Gratin

Why I Love This Recipe
Gratin comes from the French word gratter meaning "to scrape", as of scrapings.
Gratin means the dish is topped with a browned crust often using cheese, eggs, butter and or breadcrumbs.
Ingredients You'll Need
3 pounds potatoes peeled and cut into slices
2 oz. butter
1 large onion cut into slices
1 cup fresh grated mozzarella
6 whole eggs
14 oz. coconut milk
salt and pepper to taste
bunch parsley chopped for garnish
Directions
Preheat oven to 350 degrees.
In a 13 by 9 pyrex make layers of potatoes adding pieces of butter in between.
Add onions and mozzarella in between layers until layers are finished.
In a bowl mix eggs.
Add coconut milk, salt and pepper and mix with eggs.
Pour mixture evenly in potato layers.
Cook for 1 hour or until potatoes tender.
Add fresh parmesan.
Garnish with parsley.
