Why I Love This Recipe

Mom raved about this recipe and I thought in the very beginning - how odd to have saltine crackers in a recipe.... well this has turned out to be one of the best recipes ever .... chewy and delish


Ingredients You'll Need

1 tall package saltine crackers, finely crushed
2 cups finely chopped pecans
6 egg whites
2 cups sugar
1 1/2 tsp. Baking powder
1 tsp. Cream of tartar
1 tsp vanilla
2 small tubs cool whip
8 oz. cream cheese, softened


Directions

Combine 1 cup sugar, crackers, pecans, baking powder and set aside. Beat egg whites – add 1 cup sugar and cream of tartar. Add vanilla and dry ingredients.
Pour into 13 x 9 pan and bake at 350° for 25 minutes or until golden brown. Cool and store in refrigerator.
Beat cream cheese. Add cool whip. Spread over top of cooled cake. Sprinkle with coconut and pineapple (or other fruit topping).
