Salmon and Spinach Over Pasta with Basil Butter

This recipe is so simple and soooo delicious! It is healthy and filling without being heavy. I could eat this everyday! These proportions serve one but the recipe easily doubles, triples, whatever!
Ingredients You'll Need
4 oz. salmon
6 oz. fresh baby spinach
2 oz. pasta of your choice, I like rotini or gemelli for this recipe
2 cloves garlic, minced
2 T. lite butter
4 leaves fresh basil, coarsely chopped
garlic salt
salt
pepper
crushed red pepper
butter cooking spray
1/2 oz. fontina curls
Directions
Cook the pasta according to package directions. While the pasta is cooking, sautee the spinach with the minced garlic, butter spray and seasonings and grill the salmon with just a sprinkle of garlic salt. Put spinach in a serving dish, top with cooked pasta and then grilled salmon. Melt butter and basil together and pour overtop. Shave curls of fontina atop the basil butter using a veggie peeler. Then I like to pop it back in the oven for just a minute to melt the cheese and voila! 615 calories per serving.
