Salade Nicoise Sandwich

This sandwich makes it possible to transport a fabulous southern French salad with you on pincnic...Why not bring a bottle of wine along for the ride! It is healthy and delicious and easy to prepare!
Ingredients You'll Need
1 baguette ( French bread) halved lengthwise
1 clove of garlic halved lengthwise
8 soft lettuce leaves such as butter or bibb
1/4 pound new potatoes, blanched and sliced into 1/8-inch thick
3 tomatoes sliced in rounds
2 hard boiled eggs, sliced 1/8-inch thick
12 black olives Nicoise*
10 English (hothouse) cucumber slices
I can or jar of olive oil -packed tuna
4 tablespoons extra virgin olive oil
4 olive oil-packed anchovy cut into peices1 teaspoon
Salt and pepper to taste
Directions
Split the baguette halves in half horizontally. Remove a little of the soft part from the center part of each half to create a slight hollow. Rub the cut surface of each side of the bread with the garlic. Drizzle 2 tablespoons of olive oil over each side of the cute surfaces of the bread. Place 2 of the lettuce leaves on each bottom half. Top with potato slices, eggs, tomato slices, cucumbers, and olives, dividing evenly. Scatter the tuna and anchovy pieces among the layers. Season with salt and pepper and finish each sandwich with two lettuce leaves. Close each sandwich and wrap securely with foil. Weight the sandwiches lightly with a wooden cutting board or brick and store in a cool place for up to 4 hours. Unwrap the sandwiches and serve.
