Why I Love This Recipe
These are so delicious, you're going to love them.
Ingredients You'll Need
potatoes (as many as you need and want)
1 tblspoon butter or olive oil
1 clove of garlic
1 small rosemary twig (and/or other herbs like sage, parsley etc.)
Peel the potatoes and cook them in boiling, salty water for 5 minutes.
Drain and let them cool a little bit.
Cut slices about 1/2 cm wide but not all the way through, only to about 2/3 deep.
Mix softened butter (or olive oil if you prefer) with finely minced garlic (or pressed through a garlic press) and finely chopped herb(s), salt and pepper.
With the help of a spatula, brush this mixture between the slices.
Place the potatoes in a roasting pan and bake for about 45 minutes or until done.

I saw a similar recipe to this on Country Cooks and they microwaved the potatoes first. To slice them they put two chopsticks on either side of the potatoes and that kept you from cutting two far down into the potato. I plan on making these later tonight and will let you know how I made out.
Made this for dinner tonight to go with Baked Cod. It is a lot of work to prepare the potatoes. I put the potatoes in a roasting pan for 45 minutes at 400 degrees F, but when I took them out, they were not done at all and I had to microwave them for about 10 minutes as they were rock hard. So, make sure you put them in for AT LEAST an hour (if using a roasting pan). It would probably work just as well to bake them in a regular 9x13 pan, but whatever. They tasted good, but the fact that they took so much work to prepare and also that they didn't get done when the rest of the meal was done kind of torked me off. But that isn't the recipe's fault. :)
