Serves 4-6 | Prep Time 10 mins | Cook Time 20 mins

Why I Love This Recipe

Great to have on hand for Mexican night


Ingredients You'll Need

2 cans black beans (re fried if you can find them) + 1 can of liquid
1 Tbsp olive oil
1 jalapeno pepper, seeds removed, minced
2 cloves garlic, minced
1 small onion, chopped fine
1 Tbsp red pepper, chopped fine (optional)
1 tsp smoked paprika
1 tsp cumin
1 Tbsp honey
1 Tbsp apple cider vinegar
Salt & Pepper


Directions

Heat olive oil in medium sauce pan
Saute onions and peppers over medium heat until onions are translucent
Add garlic and stir for 1 minute to release flavour
Add beans and liquid
Stir in spices
Simmer over low heat until mixture is warmed through and start to bubble or until it starts to stick to the bottom of the pot
(If you have whole beans you will need to mash them when they are hot enough)
Remove from heat and stir in honey and vinegar
Serve as a base for tacos or as a side with any Mexican dish
Keeps in the fridge for several days.
