Ingredients You'll Need
2 tablespoons of flour
3 tablespoons of cooking oil (olive, avocado preferred)
2 tablespoons of red chile powder (chimayo preferred)
1-2 teaspoons of sea salt
1/2 teaspoon of garlic powder (or one clove of minced fresh garlic)
16-20 ounces of cold water
In a medium to large frying pan, over medium/high heat add oil and warm evenly until the oil begins to pop. Add in flour and stir until the flour has absorbed all of the oil and begins to brown, while continuously stirring. When the flour is browned, add in the red chile powder and mix for about 30 seconds while continuously stirring. When you can begin to smell the chile in the air, that's usually a sign that it's ready to add the water. This happens quickly so be careful not to burn the chile and flour base. Slowly pour in about 16 ounces of water to the pan, lower heat to low/medium and begin to simmer stirring continuously. Use a wire wisk to break up any clumps in the liquid. Add in salt and garlic to taste and allow to simmer for 10-15 minutes. The sauce should begin to thicken. If you'd like the sauce to be thinner, add in a small amount of water until it has reached your desired consistency. Ready to serve over any desired dish like enchiladas, tacos, or grilled veggies - enjoy!
