Ramona's Chicken & Zucchini Casserole
Why I Love This Recipe
Delicious casserole sure to be a hit at the dinner table.
Ingredients You'll Need
3 T. Butter, divided
2 lb. Chicken Breasts
Zucchini – 2 lb. – cut into ½ in. pieces
Red Pepper – 1 large
1/3 Cup Flour
1 Cup Chicken Broth
1 Cup Milk
Low-fat Cream Cheese – 3oz
1 ¼ Cups Mozzarella Cheese – divided, ¾ cup in sauce and remaining on top
Pepper – ¾ tsp
Salt – ½ tsp
Brown chicken in 1 T. butter. Remove chicken and place in large bowl.
Add zucchini and red pepper to pan and cook until soft. Remove vegetables with juices and add to chicken in bowl. (I use a non-stick pan so juices will remain)
Sauce: Melt 2 T. butter in pan. Add flour and stir until incorporated and forms a paste. Add milk and chicken broth, stirring constantly until boils. Remove from heat and add cream cheese, cheese, and salt & pepper. Pour liquid from chicken and vegetables into cheese sauce. Add chicken and vegetables to cheese sauce. Pour into casserole dish and bake.
Oven - 400˚ Bake 20 -25 minutes
