Ramona's Banana Pudding With Caramel Sauce

Delicious banana pudding with caramel sauce and whipped cream.
Ingredients You'll Need
5 ripe bananas, divided
4 T. unsalted butter, divided
2 ½ cups half-and-half
½ cup plus 2 T. sugar
6 large egg yolks
¼ tsp table salt
3 T. cornstarch
1 tsp. vanilla extract
2 T. orange juice (I didn’t use orange juice)
1 cup sugar
¼ cup water
½ stick butter
½ cup + 2 T. heavy cream
¾ tsp sea salt
2 cups of heavy (or whipping) cream
¼ cup of sugar
For Banana Pudding:
Peel and slice 2 bananas ½ inch thick. Melt 1 T. butter in medium saucepan on medium heat. Add sliced bananas and cook until they begin to soften, about 2 minutes. Add half and half, bring to boil, and boil for 30 seconds. Remove from heat, cover and let sit for 40 minutes.
Whisk sugar, egg yolks, and salt in large bowl until smooth. Whisk in cornstarch. Strain cooled half and half mixture through fine mesh strainer into yolk mixture (do not press on bananas) and whisk until incorporated; discard cooked bananas.
Transfer mixture to clean medium saucepan. Cook over medium heat, whisking constantly, until mixture is thickened and registers 180 degrees, 4 to 5 minutes (mixture should have consistency of thick pudding). Off heat, whisk in vanilla and remaining 3 T. butter. Transfer filling to bowl; cover directly with plastic wrap or parchment paper and let cool for 1 hour.
Peel and slice remaining 3 bananas ¼ inch thick and toss with orange juice. Add vanilla wafers now or wait and layer with caramel and whipped cream.
For Caramel Sauce:
Heat sugar and water to boiling. Whisk constantly. Don’t whisk and swirl pan for 9 to 11 minutes until amber colored. Remove from heat and add butter. Whisk until butter melts then add cream and whisk until incorporated. Whisk in sea salt.
For Whipped Cream:
Whip about 2 cups of heavy (or whipping) cream until stiff peaks form. Add about ¼ cup of sugar and mix until combined.
Place a layer of vanilla wafers (if haven’t already added to pudding), add banana pudding, drizzle with caramel sauce, add a layer of whipped cream, repeat. Top with whipped cream.
