Ingredients You'll Need
Ingredients for 30 servings:
• 1 c butter room temperature
• 2 c sugar
• 4 eggs
• 2 t vanilla
• 5 c flour
• 1 t salt
• 1/2 t baking soda
• Zest of one orange, less one T
• ¾ c dried cranberries
Frosting:
• 1/2 c butter room temperature
• 4 ounces cream cheese, softened
• 1 t vanilla
• ¼ t salt
• 4 c powdered sugar
• 5 T milk
• 1 T orange zest
Ingredients for 60 servings:
• 2 c butter room temperature
• 4 c sugar
• 8 eggs
• 4 t vanilla
• 10 c flour
• 2 t salt
• 1 t baking soda
• Zest of two oranges, less two T
• 1 1/2 c dried cranberries
Frosting:
• 1 c butter room temperature
• 8 ounces cream cheese, softened
• 2 t vanilla
1/2 t salt
• 8 c powdered sugar
• 10 T milk
• 2 T orange zest
Directions
Instructions are for 30 serving size:
Cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla, zest, cranberries, and mix well. In a separate bowl combine flour, salt, baking soda and stir with a whisk to combine. Add to wet mixture and mix just until combined. Spread on a greased baking sheet (use a 13 x 18 pan). Bake at 375 degrees for 10-15 min, until light golden brown or until a toothpick comes out clean (they won't look done so do the toothpick test). Cool completely and frost.
For the frosting:
Combine butter and cream cheese until smooth and creamy. Add vanilla, zest, and salt. (A few drops of almond extract can be added, if desired.) Add powdered sugar in 1-2 cup increments until combined, then add milk a little at a time and mix until smooth and spreading consistency. You may not need all the milk! Spread over cooled cookie bars.
