RHUBARB MATRIMONIAL CAKE

Why I Love This Recipe
A regular matrimonial cake uses dates. This works well well rhubarb is in season.
Ingredients You'll Need
4 cups chopped rhubarb
1 1/2 cups white sugar
2 tbsp cornstarch
1 tsp vanilla
1 1/2 cups rolled oats
1 1/2 cups flour
1 cup brown sugar
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 cup butter or margarine
Directions
Combine chopped rhubarb, 1 1/2 c. sugar, cornstarch and vanilla and cook until thickened. Cool.
In a separate bowl, combine the oats, flour, brown sugar, baking soda, baking powder and salt. Cut in butter or margarine. Press 2/3 into a greased 9x13" pan.
Pour filling ingredients over the crust and top with remaining crumbs.
Bake at 350° for 30-35 minutes. Marlene
