Pralined Sweet Potatoes and Apples

Why I Love This Recipe
This was a one of Aunt Kathy's favorite Thanksgiving side dishes. Mom loves it too!
Ingredients You'll Need
6 medium sweet potatoes, scrubbed
4 medium Granny Smith apples
juice of one lemon
1 cup packed light brown sugar
6 T butter, melted
1 tsp cinnamon
1/2 cup pecan halves
Directions
Preheat the oven to 350°
In a large saucepan, boil the potatoes about 20-25 minutes or until nearly done. Drain and cool; then peel and cut into 1/2" thick slices.
Cut the apples in half lengthwise, core and cut into 1/4" thick slices. Squeeze lemon juice over the apples. Grease a 9" square pan and arrange potatoes and apples in alternating rows, working from the outside to the middle, ending with the potatoes. Combine the brown sugar, butter, and cinnamon and sprinkle over the potato and apple slices. Top with pecan halves. Bake for 30 minutes until the potatoes are soft and slightly browned.
