Potato Salad Colorado

Why I Love This Recipe
When I asked why this salad was named this, she simply told me that it was given to her by a friend who lived in Colorado. I have, as usual, made my changes, but had to keep the name - it's just so random :)
Ingredients You'll Need
6 c red potatoes
3 hard boiled eggs, diced
1 1/2 t salt
1/2 t pepper
Dressing
1 1/2 c sour cream
1/2 c best foods mayo
1/4 c cider vinegar
1/2 c dill relish
3/4 t celery seed
3/4 t fresh thyme
3/4 t fresh rosemary, chopped
1 t dijon mustard
Directions
Boil potatoes whole in salted water, then dice
Meanwhile, prepare dressing by thoroughly mixing all ingredients together. Chill
While potatoes are still warm, toss with dressing
Add hard boiled eggs, salt, and pepper.
Refrigerate for at least 2 hours or overnight.
