Why I Love This Recipe
This is one of my favorite traditional Albanian dishes. My family came to America from Kosovo before I was born and this is one of the dishes my mom makes. I always ask her to make it on my birthday! It can be made with leeks, minced meat, spinach, pumpkin, or just feta cheese- my favorite is pitë with leeks! Once you get the steps down it is really easy and fun for the family to roll out the filo dough together... and it is delicious!!

Ingredients You'll Need
Homemade Filo Pastry
3 Cups Flour
1 Teaspoon Salt
2 Cups Water
Feta cheese (generally 1/3 to 1/2 cup but you can put as much as you'd like)
*Optional (anywhere from 1-3 cups)
Cut up leeks
Cooked minced meat
Mix flour, salt, and water together to form a dough for the filo pastry
Knead for 10 minutes
Place in a bowl and let it rest for 1 to 2 hours
Split the dough into 16 balls
Use a pin roller to roll out the dough into very thin layers that are the same size as your large round pan
In a large bowl mix together your filling: eggs, feta cheese, and either spinach, leeks, OR minced meat
Layer sheets of filo dough on top of each other in the large round pan with a layer of olive oil in between each layer of filo dough until you have used 8 sheets of filo
Add the filling evenly on top of the layered filo
Layer the rest of the filo dough on top of each other in the large round pan with a layer of olive oil in between each layer of filo dough to cover the filling and add a final layer of olive oil on top
Bake in the oven at 180 degrees for about 1 hour
Cut them up into square pieces and enjoy with some greek yogurt!
