Pinto Bean Pie

Why I Love This Recipe
This recipe is a variation on pecan pie, it uses real pecans but also the beans to give it a different texture. Most people will not realize that the beans have been added.... makes pecan pie go a lot further. And it is a great way to use up leftover pintos.
Ingredients You'll Need
1 cup cooked pinto beans
1 can coconut
4 eggs
1 cup chopped pecans
3 cups sugar
1 tsp vanilla
2 sticks of margarine
3 unbaked pie shells
Directions
Mash pinto beans well using some of the broth. In a large bowl combine coconut, nuts, sugar, margarine and vanilla. Beat all eggs well and combine with other ingredients. Pour mixture evenly into pie shells, Bake at 350 degrees for 45 minutes to 1 hours. (Depends on oven)
