Pac Choi Stir Fry

Why I Love This Recipe

FEATURING: Kale, broccoli, onion, pac choi (or other leafy green), sweet peppers, carrots, and white turnips.

You can also make it with your favorite teriyaki or peanut sauce to change things up!


Ingredients You'll Need

SAUCE
3 Tablespoons tamari or soy sauce
3 Tablespoons rice vinegar (or a bit more or less- according to taste)
2 teaspoon fresh lime juice, plus extra lime slices for serving
1 teaspoon maple syrup
1 teaspoon minced ginger
2 small garlic clove (or garlic scape), minced
1 teaspoon sesame oil

STIR FRY
2 Tablespoons sunflower oil
8 ounces shiitake mushrooms, stems removed, sliced (optional)
1 head broccoli, florets chopped, stems peeled & diced
1/4 onion, peeled and chopped (or 2 green onions, chopped)
1 Pac Choi (or 2 small Bok Choy), sliced vertically into quarters
1-2 sweet peppers, seeded and chopped lengthwise and then cut in half to have long strips
1-2 carrots, julienned
1-2 white turnips (rabioles), julienned
½ cup frozen edamame (optional)
8 ounces soba noodles or asian noodles of your choice (you can also make it on pasta for a more fusion-food feel or if that is what you have handy)

OPTIONAL ADD-INS FOR SERVING
4 teaspoons sesame seeds
Sambal or sriracha, for serving
A bit more lime, cut in quarters


Directions

MAKE THE SAUCE: Stir together the tamari, rice vinegar, lime juice, maple syrup, ginger, garlic, and sesame oil. Set aside.

MAKE THE PASTA: In a pot of salted boiling water, cook the noodles according to the package directions until al dente. Drain, rinse and set aside (or leave them in cold water or toss with a little oil to prevent clumping).

MAKE THE STIR FRY: Heat the oil in a large skillet over medium heat. Add the shiitake mushrooms (if using) and broccoli, stir to coat then let cook 1 to 2 minutes until the mushrooms begin to soften and the broccoli begins to brown. Give the pan a good shake and stir, then add the onions, Pac Choi, sweet pepper and edamame. Cook, stirring occasionally for another 2 minutes, until the pac choi and broccoli are tender but still vibrant.
Add the carrots and white turnips (if using), noodles and toss. Add the sauce, toss again. Add a squeeze of lime. Taste and adjust seasonings. Sprinkle with sesame seeds and serve with extra lime slices and sambal or sriracha on the side (optional).
