PIMENTO CHEESE SPREAD

"Perfect topping for ritz type crackers"
Serves | Prep Time | Cook TimeWhy I Love This Recipe
I think the original recipe was a kraft copycat recipe but got changed along the way w/ each new cooks tastes. Like me I used colby cheese instead of cheddar. My dad Bill Fankhauser was the 1st one to show me pimento spread on ritz crackers!
Ingredients You'll Need
8- 10 oz shredded cheese (Colby, Sharp cheddar, Mild cheddar or any mix of above)
3 oz philadelphia cream cheese (or maybe philly w/ pineapple already added?)
1/2 c sour cream
Jar pimento peppers strained or fresh well ripened pimentos diced
Opt: Shake or 2 of garlic powder
Opt: dash hot sauce
Opt: dash of cayenne powder
Opt: dash worcestershire sauce
Opt: I haven't tried this opt yet but sounds like it'll be a great addition! Approx. 2 heaping TBS crushed sweetened pineapple strained
*NOTE: The kraft copycat only calls for cream cheese, sugar and pimentos creamed together
Directions
Mix all ingredients using 3/4 of the pimentos in food processor and empty into bowl
Stir in 1/4 of pimentos and pineapple if using
Spread on ritz type crackers, make sandwiches or grilled cheese type sandwiches out of it ect
Pairs Well With
Ritz type crackers, soup
