PICKLED MUSHROOMS

Why I Love This Recipe
In the days when I was more ambitious, not that these are hard to do, I used to make these to put out to nibble on when we had friends over.
Ingredients You'll Need
1/3 cup red wine vinegar
1/3 cup oil
1 sm. onion, sliced
1 tsp. salt
2 tsp. dried parsley
1 tsp. prepared mustard
1 tbsp. brown sugar
2 - 6 oz. cans button mushrooms
Directions
Combine all ingredients except mushrooms in a saucepan and bring to a boil.
Add the mushrooms.
Simmer for 5 to 6 minutes.
Chill.
Store in a covered container in the fridge.
Drain and serve.
