Out of the cupboard quick tomato soup

Why I Love This Recipe
As a souper I try to make my soups from scratch and take all the time necessary to do it. But sometimes I'm in need of a quick soup, without having to go out shopping. The recipe below is one I can easily make from what I always have stored in the cupboard.
Ingredients You'll Need
2 tablespoons of olive oil
2 onions, finely chopped
2 cloves of garlic, finely chopped
1 tablespoon of dried basil
1 small tin of tomato puree [70 grams]
2 tins of chopped tomatoes [400 gram tins]
500 ml of vegetable stock plus one extra stock cube or 500 ml water and two stock cubes
salt
fresly grated pepper
Directions
1 Heat the oil and fry the onion and garlic for about 5 mins
2 Add basil and tomato puree and fry for another minute
3 Add the tins of chopped tomatoes with juice, stock and stockcube, bring to the boil
4 Simmer for about 10 minutes and blitz the soup with a handblender
5 Add pepper and salt to taste
Serve with bread and cheese
