Oregon Spanish Rice
Why I Love This Recipe
It's so fluffy I'm gonna die!
Ingredients You'll Need
1 cup of long grain rice or white rice
Oil for frying
1 spoonful of sofrito
2-6 cloves of garlic
2 cups of chicken broth
2 packets of sazon seaoning (con azafran)
1 can black beans or kidney beans
1 can sweet corn
1 can olives black or green
In a large skillet heat up oil with uncooked rice.
Slowly add in the two packets of sazon and coat the rice until it's all red.
Add in sofrito and garlic. Keep it moving. You don't want to burn the garlic.
Once the garlic looks done, slowly add the 2 cups of chicken broth.
Add in your additional options. Please drain your canned good before adding.
Cover until fluffy!
Additional cilantro or even lime when ready to serve!
