Old Fashioned Potato Salad

This potato salad is my families favorite.
Ingredients You'll Need
8 Med Potatoes
1 Med Onion, finely chopped
2 stalks celery chopped
1/2 green pepper chopped
2 hard-boiled eggs chopped
5 slices fried crispy bacon, slivered
2 eggs beaten
1/2 cup sugar
1 1/2 tsps salt
1/4 tsp pepper
1/4 tsp dry mustard
1/2 cup vinegar
1/2 cup water
2 Tbs bacon fat
1 Tbs chopped parsley
Paprika to fancy up sprinkle on top of salad
Cook potatoes in skins, peel and dice.
In large bowl combine diced potatoes, onions, celery, green pepper, hard-boiled eggs and bacon.
In a separate bowl combine beaten eggs, sugar, pepper, salt, mustard, vinegar, and water.
Pour this mixture into a skillet with the hot bacon fat and beat until it thickens.
Pour this over the potatoes and toss lightly. Garnish with parsley and paprika. Chill several hours before serving.
