Old-Fashioned Carrot Cake

Ingredients You'll Need
1 1/2 cups sugar
1 cup finely shredded raw carrots (2 medium)
1 cup raisins
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
3 T shortening
2 cups flour
2 tsp baking soda
1/4 tsp salt
1 cup chopped walnuts
powdered sugar, optional
Directions
In medium saucepan, combine sugar, carrots, raisins, spices, water, and shortening. Boil for 5 minutes then pour into mixing bowl and cool to lukewarm.
Stir together flour, soda and salt; stir into carrot mixture with walnuts; blend well. Put into a 9x13 pan. Bake at 325° for 1 hour. Sprinkle with powdered sugar.
