Not Boring Cod

"Cod is so mild, you have to jazz it up!"

Cod is one of those very mild fish that need some help coaxing the flavors out of it. Using some of these Mediterranean spices brings out the subtle flavors of the cod very nicely.
Ingredients You'll Need
1.5 lbs of Cod fillet, cut into 4 - 6 pieces
1/3 cup chopped fresh parsley
5 cloves garlic minced
1/2 cup flour
1 teaspoon of paprika
1 teaspoon coriander
3/4 teaspoon cumin
1 teaspoon sea salt
1/2 - 3/4 teaspoon of black pepper
5-6 tablespoons olive oil
4 - 5 tablespoons of fresh squeezed lemon or lime juice
2 tablespoons of unsalted butter
Directions
Preheat your oven to 400 degrees
in a small pot, (or bowl if you nuke it) melt your butter. Add the olive oil and lemon juice when it's melted. Mix well.
use a plate or shallow wide bowl and mix up your flour and all your spices including the salt and pepper
pat your fillets really dry. Then, dip them in the olive oil/butter mix, and dredge them in the flour mix. set aside
Put a couple tablespoons of olive oil in an oven safe pan such as cast iron, and put the heat on medium high.
When the oil is really hot, almost smoking, drop the cod into the pan and sear them on both sides for about a minute and a half. We're not cooking it here, we're crusting it and giving it color.
Remove the pan from the heat. Mix your minced garlic into what's left of the lemmon olive oil
Pour all that over the fillets and slide it into the oven
Bake for about 10 - 12 minutes depending on your oven
Remove from oven, and if there's any parsley left, sprinkle it over the cooked fillets

We lay this over a bed of yellow rice, and spoon some of the pan juice onto the rice
