My favorite Meatloaf. "Especially for sammy's the next day!"

Meatloaf has been around tor 150 years, and it's still a great comfort food. A good meatloaf sandwich the next day, is a real treat too!
Ingredients You'll Need
1 lb, each, of ground beef, veal and pork
1 Packet of Lipton's "Beefy Onion" soup mix
3 Tablespoons of fresh minced parsley
2 eggs, whole
2 Tablespoons of all purpose flour
2 Tablespoons of plain bread crumbs
2 Teaspoons of Sea salt or Pink Himalayan
1+ 1/2 Teaspoon of fresh ground pepper
1/2 Teaspoon of smoked paprika
1/2 Teaspoon of dried oregano
1/2 Teaspoon of dried thyme
6 Tablespoons of Ketchup
3 strips bacon
Directions
Mix all the ingredients except the bacon in a large bowl.
Line a loaf pan with parchment paper
Take the whole mixture and "press" it into the loaf pan firmly, as to try and eliminate any big air bubbles
Place the 3 strops of bacon on top of the mixture, so that as it cooks the bacon fat will render down into the mix.
Slide in a 350 degree oven for 1.5 hours.
NOTE> you can also cover the surface of the meatloaf with more ketchup about halfway through the cook, it gives it a nice tasty crust
Remove from the oven and let it cool for about 5 minutes
Using the parchment paper as a "handle" try and gently lift the entire loaf out of the pan and onto your cutting board.
