"Best soup I have ever had."

Why I Love This Recipe

Before making the soup we broke down a chicken in order to get the chicken needed for the recipe and it was a cool experience I’ve always wanted to have. We then followed the recipe pretty much to a t and it was a really nice soup.

Ingredients You'll Need

Unsalted butter 1 oz
Mirepoix 12 oz
Flour 2 Tbsp
Curry powder 2 tsp
Chicken stock 1 qt
Chicken meat diced cooked thigh 3.5 oz
Green apple diced 1 oz
Mushroom sliced 1 oz
Milk warm 4 fl oz
Salt and white pepper to taste
Fresh chives as needed


Heat butter over medium heat in a sauce pot and add the mirepoix and sauté for 5 minutes

Add the flour and curry powder to cook in order for form the blond roux

Add the stock and bring to a simmer for fifteen minutes

Add the chicken we got from breaking down our whole chicken earlier in the lab. We used chicken thigh for our soup

Also add the mushroom and apple along with chicken and for 15 more minutes

Finish by adding the milk and salt and pepper to taste. Add the fresh chives as garnish
