Why I Love This Recipe
Old family recipes are the best, so much better than commercial product. It takes a little more time....but that love shows through.
Ingredients You'll Need
2 eggs slightly beaten
1 1/3 - 1 1/2 c. all-purpose flour
1/4 tsp. salt
this will make a rather stiff dough. Kneed it and permit it to stand covered for 1/2 hour. Roll it until it is very thin and let dry, until it is no longer sticky but not dry or brittle. Before it becomes brittle, fold it over server times and cut it into narrow strips. toss the noodles lightly with fingers and spread them until they are dry. If you don't use all at once, you can store dried noodles in a closed jar.
