Michelle Losey's Ooie Gooy Raisin, Prune, Fig, Date or Mix Pie

Why I Love This Recipe
After making enough pies I found you can make a pie outta most any fruit, fruit mix, juice or vegetables and vegetable fruit mixes! So I began experimenting and these are my concoctions :)
Ingredients You'll Need
Use 1- 2 Cups any one or mix of any of these:
Raisin
Dehydrated Prune- chopped
Dehydrated Fig- chopped
Dehydrated Date- sweetened -chopped
OPT: add coconut or chopped/ crushed nuts
3 TBS butter melted
1/2 cup almond milk or organic grass fed whole milk
1 tsp vanilla
1- 1 1/2 cups sugar
1 tsp cornstarch opt (depends how watery if watery add)
4 eggs beaten
1/2 tsp cinnamon
Dash of salt
OPT: Oatmeal crunch topping:
3/4 oats
3/4 flour
3/4 cup light brown sugar
Dash of salt
Cold butter
Pie crust homemade or store bought poke a few holes on bottom w/ fork
Directions
Preheat oven to 375F
combine butter, sugar, cornstarch, and vanilla
Beat eggs w/milk then stir into butter mix
Add cinnamon and salt and stir
Add fruit and stir
OPT: Can put it in blender and mix well before pouring in crust
Pour into crust
Add opt. topping
Put tin foil around edges so they don't burn
Bake at 375F
Topping:
Mix together Oats, flour, salt and sugar
Cut in butter 1 TBS at a time 'till crumbly
