Michelle Losey's Cottage Cheese Custard Pie

Why I Love This Recipe
Revised version of Amish Custard Cottage Cheese Pie
Ingredients You'll Need
16 oz cottage cheese
3 eggs
1 tsp vanilla
1 tsp lemon juice
12 oz evaporated milk
1 1/2 cup whole milk
pinch of salt
*opt: pinch of nutmeg
1 cup white sugar
3 TBS cornstarch
Homemade or store bought pie crust
Directions
Preheat oven to 375F
Strain cottage cheese for 1/2 hour or more
In blender mix eggs, vanilla, lemon juice, milk and salt
Blend for a min or two
Add sugar and cornstarch
Blend for a min or two
Put cottage cheese in bowl add blender mix and mix well
Pour into pie crust
Cover edges w/ tin foil
Bake at 375F
