Michelle's No Bake Energy Bites
Why I Love This Recipe
Quick and easy no bake dessert.
Ingredients You'll Need
2/3 c. toasted coconut flakes
1 c. rolled oats
½ c. peanut butter
½ c. ground flax seeds
1 t. vanilla extract
½ c. semi-sweet chocolate chips
1/3 c. honey or agave nectar
1 T. chia seeds (optional)
(If you choose to toast the coconut, spread an even layer on a baking sheet and bake at 350 degrees for 8-10 mins. Stop to stir every 2 mins., and remove when flakes are golden brown.)
Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and chill in the refrigerator for half an hour. Roll into one-inch balls.
Store in an airtight container and keep refrigerated for up to one week.
Makes 20-25 balls.
