Maple Glazed Sweet Potatoes

Why I Love This Recipe
I'm always looking for recipes my husband will eat. He has been eating the "caveman" diet, or whatever you want to call it, for years now and he has strange eating habits. They are very healthy, but he won't eat so many things, most carbs included, so I have to find recipes he will eat and for some reason he will eat sweet potatoes, so I have a few recipes for them.
Ingredients You'll Need
2 1/2 sweet potatoes
3 T butter
1/4 cup maple syrup
2 T brown sugar
2 T flaked coconut (natural, not sweetened)
1/3 cup chopped pecans
Directions
Preheat oven to 350 degrees.
Grease 8x8 backing dish.
Boil sweet potatoesk reduce heat and cover to simmer 25 to 30 minutes or until they are soft.
When sweet potatoes are cool, peel them and cut them into large chunks. Arrange them in prepared dish.
In a small saucepan, melt butter, syrup, sugar and coconut over low heat. Cook for 3-5 minutes, stirring constantly. Sprinkle over sweet potatoes.
Top mixture with pecans.
Bake until top is lightly browned, about 15 minutes.
