Mango Curry Sauce

May be served hot with tofu.
Ingredients You'll Need
2 mangos pealed and sliced
2 garlic cloves minced
1 inch ginger grated finely
14 oz. coconut milk
3 TBSP brown sugar
2 TBSP soy sauce
1 TBSP curry
2 TBSP apple vinegar
1/4 cup olive oil
Directions
Blend all ingredients and then cook for 30 minutes in pan.
