Why I Love This Recipe

My grandparents gave my mama a cookbook when she was married in 1949. In this cookbook was the banana pudding recipe she always made for us. My daddy accidentally sold the cookbook in a yard sale when he set out a box of books that were being stored until they could move back home. Daddy's job had temporarily relocated them. I even ordered a couple of cookbooks off E-Bay with hopes that it would be like the one that had been accidentally sold. No luck there. One day, I was going through an old recipe box of mine that included handwritten recipes of some of my favorite recipes that mama had made through the years. I had put these recipes in the box during my teenage years with hopes that one day I would marry and be able to use them when cooking for my family. To my amazement, there was a copy of the banana pudding recipe in the box that my mama had regretted losing. We celebrated that 'find.'

Ingredients You'll Need

1/2 cup sugar
1/3 cup flour
1/4 tsp salt
2 cups milk
2 eggs, separated
1 tsp vanilla
36 vanilla wafers
3 medium bananas

Blend sugar, flour, and salt. Add 1/2 cup milk, stirring until smooth. Add remaining milk, mixing thoroughly. Beat egg yolks slightly and add to mixture. Cook over medium heat until thickened. Remove from heat. Add vanilla.

Make a layer of wafers, one of bananas and cover with custard. Repeat until all of the wafers, bananas, and custard are used.

Beat egg whites until stiff. Add 1/4 cup sugar, beating constantly. Spread meringue over the custard and brown in the oven. Serve warm or chilled.
