Why I Love This Recipe
From my Dutch Great Grandma :) Vegetable mashes are very traditional sides. With the most popular being traditional hutsut a mash of potatoes, carrots and onions. But to me it's a lil bland for a side and tastes much better served w/ beef and gravy! This brocc and carrot mash is a stand alone side and one of our favs! The other mash we make most often is one I concocted a mix of my fried corn and peppers with mashed potatoes. That one tastes great as a stand alone side and w/ beef and gravy! Ingredients You'll Need
Equal amounts of broccoli and peeled and chopped carrots
Sugar
Salt
Butter
Directions
Add water to pot
Add about 1/2 - 2 tsp sugar (depends on amount of veggies you have in pot)
Add about a few shakes of salt
Stir to dissolve sugar
Add veggies and cook 'till tender
Strain and put back in pot
Add butter and w/ hand masher mash up a lil (not too much you want it looking a lil chunky) (besides long strand fiber is healthier!)
Shouldn't need any more salt but taste it and add if it needs it
