Lentil Ragout

Ingredients You'll Need
2 large shallots, chopped
2 carrots, chopped
2 ribs celery, chopped
3 tbsp olive oil
1 cup lentils
2 cups beef stock
additional water as needed
Directions
Saute shallots, carrots and celery in olive oil until softened. Add lentils to vegetables and saute briefly. Add stock and cook until lentils are softened. Add additional water, as needed, to keep lentils al dente, but fully cooked.
