Why I Love This Recipe

This cake was very popular in the mid 1970's. I got this recipe from my sister, Jeanne, who got it from our Aunt Marion. This is a moist, lemony dessert that is very easy to make. Great served with a dollop of whipped cream. You could easily vary this cake to orange or lime by changing the gelatin, juice, and zest.

Ingredients You'll Need

1 pkg yellow cake mix
1 pkg lemon gelatin (3 oz)
3/4 cup vegetable oil
3/4 cup water
4 eggs

2 cups powdered sugar
juice of 2 lemons
zest from 1 lemon
2 Tbsp water
2 Tbsp butter, melted


Preheat oven to 375 degrees.

Grease and flour a 9 X 13 " pan.

Beat all cake ingredients together for 4 minutes. Pour into prepared pan.

Bake 30 to 40 minutes until cake tests done.

Mix glaze ingredients. While cake is still hot, prick the top all over with fork.

Pour the glaze evenly over the hot cake.

Cool and cover.
