Why I Love This Recipe
Easy to make and very flavorful stuffed zucchini.
Ingredients You'll Need
Zucchini (as much as you’d like to serve)
Preheat oven 350*
Peel the zucchini and cut each in half lengthwise. Scoop out the insides so they look like canoes. Save the insides.
Slice up your onion & your mushrooms and sautéed them in butter along with the zucchini insides.
Stuff the zucchini canoes with this sautéed mixture and place on a cookie sheet.
Sprinkle the mozzarella on top and bake for 45 minutes.
