Large Raw Apple Cake
Why I Love This Recipe
I always smile when I see this recipe in my file box. But funny title aside, this is a delicious old-fashioned cake. Cocoa and coffee provide a rich background for the apples and raisins. You can frost this cake, but it is good unfrosted with whipped cream or ice cream.
Ingredients You'll Need
2 1/2 cups flour
4 Tbsp cocoa
2 tsp baking soda
2 tsp cinnamon
1 tsp cloves
1/2 tsp nutmeg
3/4 cup butter (1 1/2 sticks)
2 cups sugar
2 eggs, beaten
1 cup cold coffee
2 cups chopped raw apples
1 cup raisins
After chopping the apple, sprinkle with a little lemon juice and toss to prevent browning.
Plump the raisins by pouring boiling water over them and letting them 'steep' for about 10 minutes; drain completely before adding to batter.
Preheat oven to 350 degrees.
Grease and lightly flour an angel food cake pan (or use a 9 x 13 " cake pan).
In a medium bowl, combine flour, soda, salt, and spices. Set aside.
In a large bowl, cream sugar and butter.
Add eggs, coffee, apples, and raisins. Stir to combine well.
Add dry ingredients and stir to combine.
Turn batter into prepared pan.
Bake for 50 to 55 minutes or until done.
If using an angel food pan, cool in pan for about 15 minutes; remove from pan and continue cooling the cake on a wire rack.
