Kelly's ultralite chocolate chip clouds

Why I Love This Recipe
These are from a family friend who calls them chocolate cookies, but they are really egg white meringue cookies - some of my favorite kind of cookies! The real key is in making sure the egg whites are whipped correctly and treated right after you get them there!
Ingredients You'll Need
4 egg whites at room temperature
1/4 t salt
1 1/2 t vanilla
3/4 c vanilla sugar
12 oz shaved semi sweet chocolate
Directions
In a mixer, beat egg whites on medium speed until frothy for about 2 minutes
Increase speed to high and mix until stiff peaks form
Reduce speed, and slowly add vanilla and sugar
Continue to mix until glossy peaks are achieved, about 2 minutes
Very gently fold in chocolate shavings
Drop tablespoonful size onto parchment lined cookie sheets
Bake at 250 degrees for 45 minutes
